Thai Pineapple Fried Rice
INGREDIENTS
· 1 cup pineapple tidbits (fresh is better, but canned will work too3 cups cooked rice, preferably several days old
· 4 Tbsp oil for frying - peanut or other nut oils work well
· 1-3 Tbsp. chicken or vegetable stock
· 2 shallots, thinly sliced
· 3 cloves garlic, minced
· 1 red or green chili (de-seeded if milder rice is desired)
· 1/2 cup roasted unsalted cashews
· 1/2 cup frozen peas
· 1 egg, beaten (omit if vegan)
· 1/4 cup currants (or raisins)
· 2 Tbsp. fish sauce or vegetarian fish sauce (available at Vietnamese stores)
· 2 tsp. curry powder
· 3 spring onions, finely sliced
· 1/3 cup fresh coriander
· Optional: 8-12 fresh prawns
Start by preparing the rice. Add a little oil to the rice (up to 1 Tbsp.) and work through with your fingers. You want to separate the grains of rice, so that they don't stick together. Set aside.
Place 3 Tbsp. oil in a wok or large frying pan over medium-high heat. Add the shallots, garlic, and chili, and stir fry for one minute, or until fragrant. If using prawns, add them now as well. Cooking tip: If wok/pan becomes too dry, add a little stock instead of more oil.
Push aside the shallots, garlic, and chili to make room for the egg (if using). Add the beaten egg to the wok/pan, and stir fry quickly to cook (like making scrambled eggs).
In a cup, mix together the chicken or vegetable stock, curry powder, and fish sauce (or vegetarian fish sauce). Mix well, then add to wok/pan.
Add the cashews and stir fry for a few seconds
Now add the prepared rice to the wok/pan. Stir fry until all the rice has mixed with the sauce and is a uniform color. Break up any lumps of rice with your stir frying utensil. Cooking Tip: Don't be tempted to add any more water/broth or other liquids to the rice at this point, or it will end up mushy. Keep the wok/pan as dry as possible, even if a little rice sticks to the bottom.
Add the frozen peas, currents (or raisins), and pineapple. Stir fry to mix in
Continue stir frying until everything is integrated and the rice is done (1-2 more minutes). Cooking tip: You want the wok to be hot and dry at this point. You should be able to hear some rice "popping" or crackling in the pan. Finally, do a taste test. If not salty enough, add 1 tsp to 1 Tbsp. more fish sauce. If not spicy enough, add more chopped fresh chili.
To serve the pineapple fried rice, sprinkle with spring onion and coriander. Serve on a platter, or, as they do in Thailand, in a pineapple. Thai chili sauce can be served on the side for those who like it extra spicy. ENJOY!

SuperBowl of Gumbo
1 pound fully cooked smoked sausage, cut into 1/4-inch slices
1/2 cup vegetable oil
1/2 cup all-purpose flour
2 medium onions, chopped
2 medium green bell peppers, chopped
1 cup chopped celery
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground red pepper
1/2 teaspoon dried thyme leaves
1/4 teaspoon dried oregano leaves
5 1/2 cups chicken broth
1 bay leaf
1 pound peeled, deveined medium shrimp
6 cups hot cooked rice
Directions:
1. Cook sausage in large heavy saucepan over Medium-High heat 4 to 5 minutes or until brown. Remove sausage; set aside.
2. Drain fat. Combine oil and flour in 2-cup glass measure. Microwave on High 6 to 9 minutes; stirring after 5 minutes with small wire whisk. Continue to cook at 30 second intervals, stirring after each interval until roux is dark red-brown.
3. Pour roux into heavy saucepan; add onions, green peppers, celery, garlic, salt, black pepper, red pepper, thyme and oregano. Cook, stirring, 3 to 4 minutes, or until vegetables are tender.
4. Add broth and bay leaf; bring to a boil. Add reserved sausage; reduce heat and simmer 30 minutes.
5. Add shrimp; simmer 10 minutes. Remove bay leaf. Spoon gumbo into serving bowls; top each with 1/2 cup hot rice.
Easy to tackle Jambalaya
1 1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 medium onions, chopped
2 cups chopped celery
2 medium green bell peppers, chopped
3 cloves garlic, minced
6 cups chicken broth
4 cups uncooked long grain white rice
1 teaspoon paprika
1/2 teaspoon ground red pepper
Directions:
1. Heat 8-quart oven-safe Dutch oven or stockpot over Medium heat until hot. Add sausage; cook 5 to 7 minutes or until browned. Remove from pan; set aside.
2. Add chicken, salt and pepper; cook 3 to 5 minutes or until chicken is browned. Remove from pan.
3. Drain fat leaving 1 tablespoon. Add onions, celery, green peppers, garlic and red pepper; cook, stirring 7 to 10 minutes or until vegetables begin to brown.
4. Stir in chicken broth, reserved sausage and chicken, rice and paprika. Bring to a boil; cover and bake at 375 degrees 45 minutes or until liquid is absorbed and rice is tender, stirring once or twice during cooking.

Bah's chicken parmesan pasta
i grill chicken..
then shred the chicken
cook pasta...
heat up usual pasta sauce...
then put cooked pasta, add a bunch of shredded chicken on top, then add a dallop of pasta...then shred parmesan on top
that's the healthy version
the slightly "unhealthy" version...
take chicken breasts.....pound them thin...
then in a mixing bowl..mix shredded parmesan, italian breadcrumbs, dried oregano, dried parsley, dried thyme, freshly ground pepper and salt...
in another mixing bowl, smashed garlic with extra virgin olive oil
dip chicken breasts in the oil then coat with the dry mix...
and then bake..
Bah's roast potatoes
i made abt 10-12 potatoes..
for aesthetic value, you can mix yukon gold or red new potatoes..
or you can just have one type
score the potatoes... (scoring means you place each potatoe in a wooden/metal spoon, then cut vertical slits on the potato like you were going to cut all the way down but not quite)
get it? it's to make the potatoes cook faster
the spoon prevents you from cutting the potatoes all the way down
it's like slicing but not really
oh before you cut them, make sure you clean the skin...
then in a mixing bowl....3 tbsp of EVOO
a couple of smashed garlic cloves
3 tbsp of fresh cut rosemary
you can use dried ones too
but remember 1:3 ratio for dried:fresh herbs
because dried herbs are more concentrated
i used abt 1 tbsp of dried..
then toss until all potatoes are well coated
preheat oven to 425 F (i dunno what's that in Celcius)
we're gonna roast the potatoes...roasting require higher temp..typically 400-425 F
place them on a cookie or baking pan...
then roast for 10 mins...then turn each one over...cook for another 10 mins
you can add a couple mins to each 10 mins if you like the skin to be more roasted
then test with a fork to see whether cooked....
should pierce through eash enough
oh wait i forgot....when the potatoes are in the bowl mixed with the EVOO etc, add salt and freshly ground pepper too

Chicken Pot Pie

Original recipe yield: 1 - 9 inch pie
INGREDIENTS
1 pound skinless, boneless chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
(or you can use mixed vegetables)
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
(or you can use cream of chicken soup, instead of chicken broth+milk)
2 (9 inch) unbaked pie crusts
(or puff pastry)
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C.) [180 degrees]
In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside.
In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape.
Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.
Serve with Worcestershire sauce (Lea & Perrins)
Potato Kugel
Ingredients:6 large potatoes, peeled, boiled and mashed.
A dash of your herbs and spices like rosemary, basil, black pepper and white pepper
4 large eggs, lightly beaten
3 cups of cheddar cheese
Method:
Combine all the ingredients in a mixing bowl and spoon the mixture into small baking cups. Sprinkle more cheese on top before popping into a preheated oven at 190°C.
Serves four to six people.

Sesame and Ginger Chicken
Ingredients
- 300g chicken pieces
- 2tbsp shredded ginger
- 1tbsp sesame oil
- 1tbsp chopped spring onions
- 1tbsp sugar
- 1tbsp light soya sauce
- 1tbsp dark soy sauce
- 2tbsp oil
- salt and pepper to taste
Method:
- Season chicken with salt, pepper, sugar, light soy sauce, dark soy sauce for 30mins
- Heat oil in wok until hot and fry ginger till fragrant
- Add chicken and fry till brown
- Add a little water if too dry
- Transfer chicken to claypot and simmer for 30 mins or until chicken is tender and cooked
- Drizzle sesame oil over
- Garnish chicken with spring onions and serve hot
Babi Pongteh
Ingredients:
Approx 25 small onions
2 clove garlic
(both onions and garlic peeled and chopped finely, or pounded)
3 heaped tablespoon of fremented bean paste (tau cheo)- pounded finely
1kg pig thigh (twee bak) cut into big chunks
10 dried shitake mushrooms, soaked, quartered and fried
3 potatoes peeled, quartered and fried
add salt and sugar(rock sugar) to taste
thick black sauce, gula melaka
Method:
Fry chopped onions and garlic till fragrant
Add pounded bean paste
When fragrant add in pork
Simmer for 10 mins
Add mushroom and potatotes and water from soaked mushroom
Simmer till pork tender
If too dry add hot water
When pork cooked, add salt to taste
Add rock sugar
Pongteh is generally on the sweet side, add more rock sugar and small sugar cane to give special sweet taste
